Creamy strawberry banana ice-cream

Delicious and easy to prepare treat for the summer.

  • Freeze 5-6 strawberries (wash before freezing)
  • Freeze 2 bananas, chopped without the skin

Optional : 1 frozen pitted date (for a sweeter taste)

Pour ½ cup of coconut milk or nut milk in a high speed blender, add the frozen bananas and strawberries and blend until it’s smooth and creamy.

Optional: garnish with some freshly cut strawberries.

  • 1 bunch seedless red or green grapes
  • 1 teaspoon honey

To Make

Remove one bunch of seedless grapes from their stems. Wash and gently pat dry. Place grapes on a baking sheet or plate and freeze in a single layer until firm, a few hours or overnight.

Puree the frozen grapes in a food processor or blender, scraping down sides. Add honey, zest and juice. Puree a little longer until smooth. Enjoy immediately or refreeze in small containers for a terrific anytime treat!

Tip: You can make sorbet with all different types of frozen fruit. Try using mango, pineapple, papaya, berries…or even a mixture of a few types.

A quick, fruit-based desert packed with vitamin C to sate your sweet cravings.

Peel and remove seeds of one orange. Cut into cubes. Mix orange with a small handful of fresh, chopped mint. Drizzle with 1 teaspoon raw honey. Top with handful of almonds. Serve.

Homemade Banana Bread

Eggs and vegetables come together in the oven for a beautiful, healthy and filling dinner. Serves 4 as a main course.

Ingredients

  • 4 eggs
  • 3 large bananas, mashed
  • 1/4 cup raw, organic honey
  • 1/4 cup of coconut milk
  • 1 tbsp of vanilla extract or 1/2 tsp vanilla powder or 2 pitted dates
  • 2 tbsp gluten-free baking powder
  • 2 1/4 cups of almond flour
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1 tbsp coconut oil (for greasing)

Instructions

  1. Preheat oven to 175°C.
  2. In a bowl, mash the banana and mix with the eggs, honey, coconut milk, and the vanilla extract.
  3. In a separate bowl, combine the baking powder, almond flour, sea salt and cinnamon.
  4. Combine both mixtures and stir until smooth. If the mixture is too lumpy, try using a potato masher.
  5. Grease a bread tin using coconut oil and line with silicone-free baking parchment. Grease over the parchment with coconut oil.
  6. Pour in the mixture and place in the oven.
  7. Bake for 45 minutes until golden. Remove from oven and leave to cool.
  8. Once cooled, slice up and serve with a drizzle of honey and a hot latte of your choosing!

Instructions

  • Add the cubed watermelon to a blender, followed by chopped fresh mint.
  • Blend until well pureed.
  • Pour the liquid into popsicle molds and freeze until hard (about 3 hours).

Tips to pick out the perfect watermelon:

  1. Weight: when you compare the weight of watermelons of the same size, choose the heaviest one.
  2. Color: look out for a yellow spot on the water melon (where the watermelon was laying on the ground while it grew) to make sure it is sweet and ripe.
  3. Sound: gently knock on the outside of the watermelon; make sure it has a hollow sound (as opposed to a dull sound).
